Wheat Gluten Product
A/ Washing of wheat gluten.
Ingredients | Quantity |
High protein flour (Blue Ruby or Bintang) | 1 Kg |
Water | 630 Gm |
Oil | 270 Gm |
1/ Knead flour, water and oil together in bowl until the dough is developed and smooth. Immerse in water and set aside for 30 minutes.
2/ Wash dough by kneading to separate the wheat starch from the gluten. Drain water and repeat the process until water is clear and the wet gluten is obtained.
3/ Place gluten in a wet tray and leave aside for 2-4 hours until it becomes smooth, soft and extensible.
4/ The wet gluten is now ready to be shaped into various forms.
B/ Vegetarian Satay
Ingredients
Ingredient | Quantity |
Coriander powder | 2 tbsp |
Cumin powder | 1 tsp |
Tumeric powder | ½ tsp |
Sugar | 4 tbsp |
Oil | 4 tbsp |
Chili powder | 1 tsp |
Salt | ¼ tsp |
Gluten (cut to small pieces) | 300g |
Satay |
Gravy : Satay sauce is available from supermarkets.
Method
1/ Heat oil in a wok and fry coriander powder, chili powder, tumeric powder and cumin powder together. Add salt and sugar. Then stir fry these ingredients with the gluten until sugar is dry. Allow to cool.
2/ Skewer 3 pieces of satay gluten pieces on each satay stick.
3/ Grill satay before serving with cucumber, onions and satay gravy.
